Highland Park is Scotland’s most northernly distillery, sitting on the island of Orkney. 20% of the barley for each mash is dried using local peat on site, while all unpeated malt is taken from the mainland. The peat in Orkney differs from that of the mainland and Islay, it tends to have more of a heathery and fragrant.
